Cast Iron Cornbread
Ingredients
- 1c ap flour
- 1c yellow cornmeal
- .25c sugar
- 1tbps baking powder
- .5tsp baking soda
- pinch of salt
- 1c buttermilk
- .25c honey
- 2 eggs
- .75 stick butter
Prep/Bake
- Place a round cast iron pan in oven and heat to 400°.
- Grab two bowls. Mix dry ingredients in one, and wet in the other.
- Make a well in the dry bowl and pour in the wet mix.
- Mix batter until 'just' combined. Don't overmix.
- Take hot pan from oven and toss in butter. Coat pan until butter is fully melted.
- Pour in batter. Using a spatula, mix butter into batter.
- Place back in oven. Cook until top has browned lightly. Check on it after 10 minutes and then every 5 minutes until it's looking good.
