Cast Iron Cornbread

Ingredients

  • 1c ap flour
  • 1c yellow cornmeal
  • .25c sugar
  • 1tbps baking powder
  • .5tsp baking soda
  • pinch of salt
  • 1c buttermilk
  • .25c honey
  • 2 eggs
  • .75 stick butter

Prep/Bake

  1. Place a round cast iron pan in oven and heat to 400°.
  2. Grab two bowls. Mix dry ingredients in one, and wet in the other.
  3. Make a well in the dry bowl and pour in the wet mix.
  4. Mix batter until 'just' combined. Don't overmix.
  5. Take hot pan from oven and toss in butter. Coat pan until butter is fully melted.
  6. Pour in batter. Using a spatula, mix butter into batter.
  7. Place back in oven. Cook until top has browned lightly. Check on it after 10 minutes and then every 5 minutes until it's looking good.
