cast iron cornbread
ingredients
- 1c ap flour
- 1c yellow cornmeal
- .25c sugar
- 1tbps baking powder
- .5tsp baking soda
- pinch of salt
- 1c buttermilk
- .25c honey
- 2 eggs
- .75 stick butter
prep/bake
- place a round cast iron pan in oven and heat to 400°.
- grab two bowls. mix dry ingredients in one, and wet in the other.
- make a well in the dry bowl and pour in the wet mix.
- mix batter until 'just' combined. don't overmix.
- take hot pan from oven and toss in butter. coat pan until butter is fully melted.
- pour in batter. using a spatula, mix butter into batter.
- place back in oven. cook until top has browned lightly. check on it after 10 minutes and then every 5 minutes until it's looking good.
